Apple Pastry Rings

These little guys are so stinking cute. I've made them three time already this Fall!

They're like if you took an apple turnover and a croissant and put them together, but covered them in cinnamon sugar. Seriously, what could be better?

​

One of the other differences is how EASY they are! Slice some apples, wrap in pastry, there you go!

​

Oh, and top them with ice cream or a caramel drizzle (or both!) and you have a dessert absolutely no one could say no to.

tips & tricks

 

Type of apples: Granny Smith - I'm sure you guessed it! These tart baking apples are perfect for complimenting the pastry, the sugar, and the cinnamon. However, Gala apples are a close second in my book. Still tart, they add some extra flavor that can take your filling up a notch. Plus, it's always good to have a back up in case one variety is not available at your local store or market. Just make sure they are a bit bigger than medium as it's easier to wrap a larger slice.

Acid: Adding some lemon can do two things - preserve the flavor of your apples, and add some counter flavor to the sweetness. There's little worse than brown apples, but while cutting them all up they may start to turn. Drizzle some lemon juice on the freshly cut apples to preserve them and avoid them going brown and bitter. 

Have ice cream on hand - I promise you will not regret it. 

Storage: Store in the fridge for 3-5 days.

ingredients

2 medium-large apples

1 roll of puff pastry

1/4 cup sugar

1 tbs cinnamon

2 tbs butter, melted

1-2 tsp lemon juice

Preheat oven to 400°F. Prepare one cookie sheet with parchment paper.

Whisk together cinnamon and sugar, set aside.

Core apples and cut perpendicular to the core, so that each slice is a ring with a whole where the core was. *If you do not have a corer, cut the apples the same way and cut out the core from each slice. I used a piping tip! Drizzle the apple slices with lemon juice to prevent them from turning brown.

Roll out puff pastry gently into a rectangle. With a pizza cutter, cut lengthwise strips approximately 3/4" wide.

Wrap each apple ring with a strip of the pastry until fully covered - you may need more than one strip per apple ring.

Place each apple ring on the cookie sheet, spaced apart. Brush with the melted butter and sprinkle with the cinnamon sugar.

Bake for 20-25 mins or until the pastry is puffed and golden brown.
